Ladies & Gentlemen,
do you ever have those weird days when you don’t actually know how you feel or what you want? Sometimes you just want to have something new in your life. You want to experience something thrilling. You need a change.
We all have those days… Don’t we?
I know… the “mean reds” described by Holly in “Breakfast at Tiffany’s” are real. Consequently she used to go to the “Tiffany’s” store in order to feel a little bit better.
I like to go for long walks or hiking tours. You might like to read a book, or book a trip somewhere… There are so many ways to invent something new & exciting in our lives – it is art & we are living it 🙂
Of course, sometimes it is good to simply close yourself in the kitchen & start making something marvelously delicious!
If you are scrolling through food blogs, you should be one of those who finds yourself very comfortable while creating something new in your kitchen.
I have good news for you – I had that one morning when I did not know what I wanted, I did not know where I wanted to be or what I wanted to do that day. My mum was visiting, & I wanted to spoil her with a little treat. What could be better than a piece of a good dessert??
You know what they say: “Stress is DESSERT, spelled backwards“.
There was one day when I was visiting this Italian supermarket “Supermarco” in Copenhagen. I & my friend went for some inspirational food shopping.
I definitely think she could confirm that I went a bit bananas there. Especially, when I saw all those organic specialties they had. Moreover, I found the “Chestnut Flour”. I did not know what I should have used it for that time but I knew that I needed it!
That was a good choice! As the best result, I let myself to spend some time inventing a new Chestnuts Paleo Cake. Furthermore, I found a lot of chocolate & a little bit of rum at home:)
First time I baked it, it was for my mum. She was super happy about the dessert… We ate so much of it that it disappeared in few hours. & you know what – for the first time I did not feel guilty for having so much cake!!! 🙂
As the result of this delicious experiment I had many friends of mine in various countries trying the recipe & I have been pleased with many positive comments. I could not be happier about the result.
Holly might have her “Tiffany`s” store to calm her down. I have my recipes that I love to share.
So, please take your pens, your bowls, prepare your oven & let’s start baking!
Make yourself a cup of either good coffee or tea, find a comfortable space to be & grab a piece – enjoy it! #atveros is happy to present this Chestnust Cake into Vero’s Paleo treats’ collection.
- 200g organic chestnuts flour
- 3 large organic eggs
- 20 organic sun-dried figs
- 4 Tbsp raw organic coconut sugar
- 1/dl melted organic coconut oil
- 1 shot glass dark rum
- 3 Tbsp raw cacao powder
- 1 shot of espresso (optional)
- Pinch of unrefined salt
- Pre-heat an oven to 180C/360F
- Blend the eggs together with the sugar & coconut oil
- Slice the figs into small pieces
- In a separate bowl mix the flour & the cacao powder
- Place everything together in one bowl & add the rum/coffee/salt & mix it all well
- Spread some coconut oil on the baking form & dust some cacao powder on top
- Put the mass in the form & shuffle it in for around 30/40 minutes (depending on an oven)
